Healthy Chicken Recipe

Happy Friday! Today, we wanted to share a recipe from the Body Ecology cookbook (you can purchase it here) because when beginning this cleanse, you want to make sure that you eat healthy, clean foods that won’t undo all the work you’re doing!!!

This recipe takes organic chicken, and with simple instructions, turns it into a family lunch that can’t be beat! We suggest properly combining your foods, which means that with this meal, it’s suggested you combine it with leafy greens (such as a salad), or vegetables! Don’t forget to take some digestive enzymes, or eat some cultured vegetables – this will help the body digest the food easily!

Chicken Breasts Roasted in Fresh Garden Herbs

INGREDIENTS:

1 Cup Fresh Oregano Leaves

1 Cup Scallions (Coarsely Chopped)

4 Tablespoons Fresh Cilantro (Coarsely Chopped)

2 Small Garlic Cloves

Juice From 2 Organic Lemons

1 Tablespoon Melted Coconut Oil or Ghee

1 Teaspoon Fine-Grind Celtic Sea Salt

½ Teaspoon Crushed Red Pepper Flakes

4 Free-Range, Organic Boneless, Skinless Chicken Breasts

DIRECTIONS:

  1. Combine all ingredients except chicken breasts in a food processor bowl and process until minced.

  2. Place chicken in a casserole dish, top evenly with the herb mixture and marinate, refrigerated, for at least one hour.

  3. Roast very slowly at 275 degrees for one hour and 15 minutes, or until the chicken breasts are very pale pink. (About 170 degree on an instant-read thermometer).

  4. Let cool slightly and enjoy!
